Having studied the process in depth, the initial calculations required some adjustments. The basic principles of distillation are outlined somewhere else. I did find the explanaitions by Zymurgy Bob very helpful.
If I assume a 10 % wash to be distilled, the wash with start to boil 90 °C. The vapor that is forming will contain about 60 % ethanol and 40 % water. As the distillation commences the ethanol in the wash decreases from 10 % down to 1 %. The vapor in equilibrium with 1 % wash contains 15-20 % ethanol and up to 90 % water. The 1 % wash is boiling at 98 °C.
