Spring time is elder flower time. One of my favorite recipes is elder flower sirup. Since my childhood I indulge the flavour. It reminds me spring sun and playing in the greens.

Ingredients

  • 40-50 corymbs of black elder (sambucus nigra)
  • 500 g cristal sugar
  • 1 liter water, cold
  • 1 lemon, juice of it
