Spring time is elder ﬂower time. One of my favorite recipes is elder flower sirup. Since my childhood I indulge the ﬂavour. It reminds me spring sun and playing in the greens.
- 40-50 corymbs of black elder (sambucus nigra)
- 500 g cristal sugar
- 1 liter water, cold
- 1 lemon, juice of it
